Game Day Breakfast Sandwiches… with BACON!!!

ingredients to grill bacon, eggs, cheese, english muffins,

Ok… we have the grill fired up and we are ready to go!

When you get to the game at OH-DARK EARLY you are going to probably want to eat more than once before the game starts. Tailgating Breakfast Sandwiches make for a fantastic first course and a great way to warm up before a football game on a cool fall morning.

YOU WILL NEED:

1 Pound Bacon
12 Eggs
12 English Muffins (sliced)
12 slices Your Favorite Cheese (we love American)
Butter (1-2 sticks)
Salt & Pepper (or your favorite seasonings)

OPTIONAL: Hot Sauce

Makes 12 Ultimate Tailgating Breakfast Sandwiches!

First off… Fire up the grill and warm your skillet to 350 F.

Coat your skillet with butter (or non-stick grilling spray)

Start with Bacon… cook until it is about about half done.

Flip your bacon over then add eggs to the skillet. (break the yoke or not… it’s up to you)

Season your eggs with spices (and/or hot sauce) (and optionally your bacon).

Next, cut your muffins in half and place each half on the skillet (for best result, place each muffin half over a pat of butter
(1-1/2 teaspoons is about “one pat” of butter))

Once your egg is almost done to your liking, cover it with your favorite slice(s) of cheese and grill for 1-2 minutes more.

I used American and Colby Jack in the photo below:

I like to let the cheese melt over the egg a bit (1-2 minutes)

You have to admit… you are getting hungry looking at this… aren’t you?

Remove from skillet, assemble and serve.

I don’t think you heard me… I said I want ALL THE BACON AND EGGS you have!

The great thing about breakfast sandwiches is that they are very simple and you can make them on the grill for your tailgating crew pretty easily… especially if you have a cast iron skillet or even a aluminum pan for your grill.
