Lemon Salmon
One of my wife's favorite feel good foods is salmon on the grill. Making this is a good way to get myself out of the dog house when I have done something stupid to put myself in there. Actually, now that I'm thinking about it... I should just start making this for her everyday.
Ingredients

- 0.5 pound(s) salmon
- 1 whole lemon
- 0.5 cup(s) butter
- 1 pinch(es) lemon pepper
Lemon Salmon Directions
- Place salmon filet (skin side down) in aluminum foil pan.
- Slice lemon and add to pan. Top with butter and pepper.

- Grill on lower rack for approx 20 minutes. You can tell when it is done when the meat easily separates from the skin.

Quick alternative for salmon: Lay it skin-side down on ordinary (NOT non-stick) foil, smear a bit of olive oil on the top, sprinkle liberally with dill (fresh or dried..I've used both and they're fine) and some seasoned salt, pull up the edges of the foil a little to keep the flavors in, then close the grill till the salmon is cooked thru - 10 mins...give or take. You know when fish is done, right? The lovely flesh just slips off the skin because the skin sticks to the foil...no mess!
