Parmesan Campfire Potatoes

This is a real nice side dish to go with your other fixin’s. I’m not a huge Parmesan cheese fan…. but I really like this recipe. Easy and tasty.


10 Red Medium Potatoes (diced)
1/4 Cup grated Parmesan cheese
2 Teaspoons minced fresh parsley
1/4 Cup Butter (cubed)

Spices:
3/4 teaspoon garlic powder** 
1/2 teaspoon salt plus**
1/8 teaspoon pepper (or instead of those… just use 2 teaspoons of this awesome sports blend ) yes… it’s fantastic and yes… we are a little bias. 🙂

Parmesan Potatoes on the grill

You say Potato… I say Potato (and Hobbits say Taters)

  1. Dice potatoes and place in piece of heavy duty aluminum foil.
  2. Sprinkle with Parmesan cheese, parsley and spices. Top with butter.
  3. Fold Foil around the potatoes and place on grill over medium heat for 35-45 minutes until potatoes are tender.
