Arizona Cardinal on a Can (Beer Can Chicken)

Beer Can Chicken is always a favorite when tailgating. This is a really good recipe when your football team is playing the Cardinals (or substitute your un-favorite bird team here). PLUS it makes the entire neighborhood smell awesome-good in the process. 🙂

Note: Use a stainless steel can holder to make this entire process effortless.

(Serves 5 people)

4 pounds whole chicken
12 ounces Dr. Pepper (in can form)
1/10 floz extra virgin olive oil
2 cloves fresh garlic

  1. Rub the outside of the skin with olive oil and then add poultry seasoning, lightly covering the entire bird…. and/or grind fresh pepper and salt over bird to desired taste.
  2. Empty on half of the can of soda (i like using Dr. Pepper) in a measuring cup. Place cloves of garlic in can.
  3. Place the can on grill in the holder and place the chicken over it. Pour the liquid from the measuring cup in the saucer under the chicken.

grill: grill should be at 375… cook the bird 20 min. per pound or until the breast meat has reached an internal temperature of 170 degrees.
or
smoker: set the smoker at 250 degrees and cook for 5-6 hours.
