Bacon Breakfast Pie

Oh boy! you folks are gonna love this one from our guest author George Meyer. He perfected this campfire recipe while roughing it up North in the Boundary Waters area between the United States and Canada. Not only does it work great over a campfire… i’m sure you will find it to be fantastic on your grill while tailgating.

Ingredients:

  • 1 PILLSBURY PIE CRUST* (boxes come with 2, so you can make both by doubling the recipe)
  • 4 eggs
  • 2 cups milk
  • 1/3 cup diced onion (or green onions if you prefer)
  • 1 cup shredded cheddar cheese (works best if you shred from a block, but bag shredded cheese is fine too)
  • 3 slices bacon (cooked and crumbled)
  • 1 ½-2 cups diced potatoes or hash browns (cooked and drained)
  • ¾ tsp Salt
  • ½ tsp Pepper
  • ¾# of bacon (about 10 pieces) (thinner sliced bacon works better)
  • Maple syrup

Preheat grill to 350 F

In a large bowl Beat eggs and milk. Add in onion, cheese, crumbled bacon and potatoes and mix well

Place pie crust in a 9 inch pie pan, fill with mixture. Cook for approx. 30-40 mins (or cover in tin foil and grill over indirect heat) until mixture is firm enough to set the bacon on

Raise temp to 450 F

Weave bacon and place on top of egg mix, and brush with maple syrup for a glaze. (bacon will shrink, it’s fine if it hangs over the edges a bit) Wrap edge of pie crust with tin foil (like any pie) to prevent pie crust burning. Place in oven or grill for another 10-15 minutes until bacon is done

Drain off grease and let sit for a few minutes before serving.
