
Campfire Potatoes
October 29, 2014When I was young, my family used to take trips in my parent’s pickup-camper all over the USA and over the years we visited many different State and National parks across this great nation. We even visited Jelly-Stone Park in Montana one year… NO… Really! That’s a real place. Any-who, we didn’t eat out at restaurants. We always bought our own food, and did a lot of cooking at the campfire. Campfire potatoes was one of those things that was a regular fare that I didn’t appreciate much back then, but I love it now.
4 Medium Potatoes
1/2 Green Pepper
1/4 Yellow Onion
1/2 Stick Butter
2 pinches Celery Salt
1 pinch Black Pepper
- Dice Potatoes and put on aluminum foil.
- Chop Peppers and onion and add to potatoes.
- Add butter to top.
- Sprinkle spices over the top.
- Wrap with second piece of aluminum foil and grill on upper rack ( medium heat) for 60 minutes.
