When I was young, my family used to take trips in my parent’s pickup-camper all over the USA and over the years we visited many different State and National parks across this great nation. We even visited Jelly-Stone Park in Montana one year… NO…  Really! That’s a real place. Any-who, we didn’t eat out at restaurants. We always bought our own food, and did a lot of cooking at the campfire. Campfire potatoes was one of those things that was a regular fare that I didn’t appreciate much back then, but I love it now.

4 Medium Potatoes
1/2 Green Pepper
1/4 Yellow Onion
1/2 Stick Butter
2 pinches Celery Salt
1 pinch Black Pepper

  1. Dice Potatoes and put on aluminum foil.
  2. Chop Peppers and onion and add to potatoes.
  3. Add butter to top.
  4. Sprinkle spices over the top.
  5. Wrap with second piece of aluminum foil and grill on upper rack ( medium heat) for 60 minutes.
