Grilled Potatoes and Onions

One of my favorite side dishes is grilled potatoes and onions. To prepare, you’ll need… Potatoes, Onions (Yellow), Butter, Minced Garlic, Salt & Pepper.

(For 4 people)

5 medium potatoes
1 small onion
1/2 cup butter
2 ounces mushrooms
2 ounces minced garlic

1.) What I’ll do is layout a sheet of aluminum foil about twice the length of a cookie sheet and then fold it back over itself so you’ll have a little more strength on the bottom. Next take a stick of butter, and coat the aluminum foil (dull side) with the butter. Not margarine, butter. I’ll cut the potatoes into slices, not too thick to ensure they’ll cook, and I’ll also cut the onions lengthwise as well, so you’ll have rings, but if you want to cut them into chunks, that’s fine, just make sure you separate the chunks so they aren’t too thick. Spread the potatoes and onions on the aluminum foil. Next, take a cold stick of butter, cut it into slices, and spread around. You might need more than one stick depending on how many potatoes and onions you’re making. Next, add minced garlic, salt and pepper for seasoning, and take another sheet of aluminum foil and cover. I’ve added mushrooms in the past as well, and that’s worked out well.
2.) Place the aluminum foil pack on the grill, and indirectly heat for about 35-45 minutes to make sure the potatoes are soft.
3.) Ree-damn-diculous.
