Grilling Baked Potatoes

This might be even better than french fries.

I know you probably believe that the only reason that potatoes were invented was for use in Vodka. What you might not know is that in raw form and mixed with fire, potatoes make a pretty good side when grilling. Baked potatoes in foil has long been a staple of the tailgate. Here is a great and tasty way to serve them up. (Vodka chaser is totally optional.)

Medium Sized Idaho Potatoes
Aluminum Foil 
Extra Virgin Olive Oil (EVOO)
Louisiana Cajun Seasoning (linky) *

Wash potatoes and slice 90% of the way (see photo) leaving bottom in tact. (Don’t cut all the way through).

Slice ALMOST all the way

Cover potato with EVOO then sprinkle with seasoning

Grilled Potatoes potatoes with EVOO.

Sprinkle Cajun Seasoning all over top.

Wrap each potato  with aluminum foil.

Remove with tongs.

Grill over indirect heat at 350 F for an hour then let rest 5 minutes and serve.
