Ham and Cheesy Potatoes

This is an easy side to that you can cook on the top rack of your grill.

(serves 4)

4 medium sized potatoes
1/2 cup yellow onion
1/2 cup cooked ham (cubed)
1 stick butter
1 cup shredded cheddar cheese

  1. Cube potatoes with skin on. Chop onion and precooked ham into approx 1 inch pieces.
  2. Add butter and season lightly with garlic salt and black pepper.
  3. Wrap all ingredients in aluminum foil and place on top rack of grill for at least one hour (cooking longer is OK).
  4. Remove from grill and top with shredded cheese then recover with foil for 5-10 minutes to allow cheese to melt.
