How to Grill the Perfect Steak

Grilling the perfect steak takes a little practice, but the good part is you get to eat your mis-steaks. Wow… that was really a Bad Cow Pun! The method is similar whether you are using a charcoal or gas grill, and I will cover the how to step by step. Keep in mind that cooking times will very depending upon the thickness of the cut… the instructions below assume that your sirloin is 1 inch thick.

SEAR FIRST METHOD:

1) First, make sure to bring the meat up to room temperature by letting it warm up for at least 40 minutes outside of the cooler. This is a great time to add your favorite steak seasoning on the top, then flip the steak and repeat the process. 2) Oil your grates to prevent meat from sticking, then preheat your grill to about 500° F. 3) Place the steaks on the hottest part of the grill (directly above the coals) and let sear (without moving it) for about 2-3 minutes. 4) Flip your steaks and let the other side sear for about the same amount of time (2-3 minutes). 5) Move your steaks to indirect heat (away from the hottest coals) cover the grill and allow to cook until done to your liking. Make sure internal temp reaches at least 145° F for medium. 6) Remove from grill, cover and allow to rest 5-10 minutes before cutting.

SEAR LAST METHOD:
1) First, make sure to bring the meat closer to room temperature by letting it warm up for at least 40 minutes outside of the cooler. This is a great time to add your favorite steak seasoning on the top, then flip the steak and repeat the process. 2) Oil your grates to prevent meat from sticking, then preheat your grill to about 350° F. 3) Place the steaks on the coolest part of the grill and let cook for 20-30 minutes. 4) Now move your steaks to the hottest part of the grill (directly over coals) for 2-3 minutes. 5) Flip your steaks and let sear for 2 more minutes then remove from grill. Make sure internal temp reaches at least 145° F for medium. 6) Remove from grill, cover and allow to rest 5-10 minutes before cutting.

50/50 METHOD: (my favorite)
1) First, make sure to bring the meat up to room temperature by letting it warm up for at least 40 minutes outside of the cooler. This is a great time to add your favorite steak seasoning on the top, then flip the steak and repeat the process. 2) Oil your grates to prevent meat from sticking, then preheat your grill to about 400° F. 3) Grill over indirect heat 10 minutes 4) Flip and cook an additional 10 minutes. Make sure internal temp reaches at least 145° F for medium. 5) Remove from grill, cover and allow to rest 10 minutes before cutting.
