
Meatloaf in the Smoker
March 30, 2018Add some smokey goodness to your next meatloaf by making it outside in your smoker. Your friends and family with thank you!
(For 6 people)
3 pounds Lean Ground Beef
1/2 pound Thin Sliced Bacon
1 Sweet Red Pepper (Chopped)
1 Orange Pepper (Chopped)
1/2 cup Mushrooms (Chopped)
1/4 cup Sweet or Yellow Onion (Chopped)
1 cup Saltine Crackers (Crushed)
1/4 cup Yellow Mustard
1/4 cup BBQ Sauce (Jack Daniel’s® Original No. 7 Recipe) (linky)*
1 tablespoon Worcestershire Sauce
1/2 teaspoon 10 Pepper Blend Spices (or black pepper)
1 teaspoon other spices (Tailgate Master Tears of our Rivals) (linky)
2 Medium Eggs
Top With:
1/4 cup Ketchup
2 pinches Parsley
Wood Used: Hickory
1.) In a large mixing bowl combine meet and spices then hand mix until well blended.
2.) Add chopped onions, chopped peppers, chopped mushrooms, crushed crackers, eggs, BBQ sauce, Worcestershire sauce, and mustard, then hand mix.
3.) Form mixture into a loaf and place container (I used a glass cooking container, but you can use cooking tins or aluminum foil pans as well. Make sure to coat inside of container with non-stick cooking spray before filling.
4.) Make a bacon weave and cover loaf. Sprinkle spices (to taste).
5.) Load smoker with Hickory Wood and cook at 300F for 2.5 hours.
6.) Remove from smoker, spread ketchup over top of loaf and sprinkle with parsley.
7.) Let rest for 10 min. then cut into slices and serve.
