One Pot Meal Ideas

Summer is here, and we all know what that means! Warm weather, backyard BBQs and best of all, tailgates with family and friends. The perfect summer activity is to light up the grill and make a delicious hearty meal for the whole group! NOM!

However, the last thing anyone wants to do is spend the whole event prepping or cleaning, when you could be enjoying yourself! One pot meals are the perfect solution. Simply use the same pot to prep, cook and clean up in. From toasty mac & cheese to layered nachos or a chicken and veggie stir fry, they’re an easy way to put together big portions that will satisfy the whole group.

One pot meals are ideal for anything from camping to tailgating on Fourth of July, giving you the freedom to spend time doing other things.

One Pot Camping Breakfasts

Egg Scramble:

  • Eggs
  • Bacon Crumbles
  • Peppers, tomatoes (add any other veggies you like!)
  • Oil

Heat pot with oil. Chop veggies. Crack eggs into pan and heat until half-cooked. Add veggies and bacon crumbles and cook all the way through.

2 Ingredient Banana Pancakes:

  • Eggs
  • Ripe bananas
  • Oil or butter for pan
  • Optional toppings: Syrup, nuts or berries

Heat pot with oil or butter. Mush bananas with fork. Mix in eggs. Pour batter into pot and heat for a couple minutes, then flip.

Coconut Chia Oatmeal:

  • Rolled oats
  • Coconut flakes
  • Chia seeds
  • Optional mix-ins: Coconut milk, berries, bananas or nuts

Boil water in pot. Add ½ cup of rolled oats to every 1 cup water. Mix in oats, take off heat, cover and let sit. Mix in coconut milk, coconut and chia. Add any additional toppings and enjoy!

Dinner:

After a long day of exploring, dinner is likely the first thing you’re thinking about. The good news is you don’t have to sacrifice a hearty meal, just because you’re outside! Try these easy one pot dinner meals and cooking tips to nourish the whole group. The best part about each of these options is that they’ll have an added smokey flavor from the charcoal grill!

Layered Nachos

  • Chips
  • Cheese
  • Black beans
  • Olives
  • Cilantro
  • Optional Topping: Avocado

Layer chips, then cheese then toppings (beans, olives, cilantro) about 3 times and cook until melted. Top with chopped avocado.

Campfire Chili:

  • Black beans
  • Kidney beans
  • Diced tomatoes
  • Diced onion
  • Chili powder
  • Optional: top with cheese

Saute diced onion in oil until it begins to soften. Stir to combine black beans, kidney beans, tomatoes and dash of chili powder. Heat for about 20 minutes until thickened then top with cheese and enjoy!

Colorful Stir Fry:

  • Zucchini
  • Red, green and orange bell peppers
  • Onion
  • Any other veggies you like!
  • Oil
  • Optional: Meat of choice

If you are adding meat, saute in oil until cooked through. Chop peppers, onions and any other veggies you decide. Add in and saute until soft.

 

Desserts:

The best night cap to an active day is sitting around the fire eating a delicious dessert. However, you don’t have to limit yourself to packaged sweets. The ideal camping dessert requires few ingredients and is easy to make. Satisfy your sweet tooth with these flavorful one pot dessert ideas.

One Pot Camping Desserts:

Quick and Easy Apple Crisp:

  • Apples
  • Spices: cinnamon, nutmeg
  • Brown sugar
  • Granola or oats
  • Butter and oil
  • Optional topping: ice cream

Heat butter or oil in pot. Cut apples in thin slices and layer in pot. Mix cinnamon, nutmeg, brown sugar and granola or oats. Cover apples with mixture and heat until cooked.

Banana Boats:

  • Bananas
  • Marshmallows
  • Chocolate chips
  • Optional fillings: strawberries, coconut or nuts.

With the peel on, slightly cut banana down the middle of the concave side. Squeeze and fill with marshmallows, chocolate chips and any other fillings. Wrap in aluminum foil and place directly on grill.

S’mores Dip:

  • Marshmallows
  • Chocolate
  • Graham crackers

Layer chocolate in bottom of buttered pot. Top with marshmallows. Heat until chocolate softens and marshmallows are golden brown. Dip with graham crackers and enjoy!

No-Bake Peach Cobbler:

  • Peaches
  • Granola of choice
  • Cinnamon
  • Brown sugar
  • Butter
  • Optional toppings: nuts, coconut or ice cream

Heat butter or oil in pot. Cut peaches in thin slices and layer in pot. Mix butter, cinnamon, brown sugar and granola or oats. Cover peaches with mixture and heat until cooked.
