Jackie’s Real Swedish Meatballs

You don’t have to tailgate in Scandinavia to learn how to make real Swedish meatballs.

(Although, truth be told, I have been tailgating in Scandinavia … and the Swedish Meatballs are crazy good!)

This recipe is a little more involved than the average one on this site, but I think the homemade taste more than makes up for that.  For this one you will need your skillet and your slow cooker.

Meatballs:
2 Lbs Ground Beef

1 Medium Onion (chopped)
2 Eggs (beaten)
3/4 Cup Seasoned Bread Crumbs
3/4 Teaspoon Salt
1 Teaspoon Pepper

Swedish Meatball Gravy:
2 Cans Condensed Beef Consomme, undiluted (10.5 ounces each)
2 3/4 Cups 2% Milk
1 Tablespoon Worcestershire Sauce
1 Teaspoon Ground Pepper
1/2 Cup All-Purpose Flour
3/4 Teaspoon Salt

1) Mix Beef, Onion, Eggs, Bread Crumbs, Salt and Pepper in large bowl.

2) Shape into meatballs

3) On Skillet, brown meatballs and set aside. (save drippings from skillet)

4) Add flower to skillet drippings, stir in and cooke until light brown (IMPORTANT: Don’t Burn). Whisk in milk until smooth

5) Stir in consomme, salt & pepper and Worcestershire Sauce.

6) Bring mixture to boil, Cook while stirring for 2 minutes (until gravy has time to thicken)

7) Put Meatballs in Crock Pot, add Gravy.

8) Cook on low for 3-4 hours (Sprinkle with parsley right before serving)
