So you really want to be a Tailgate Master? Well then, It’s time to go big or go home! Let me introduce you to the Orangewood Smoked “PorkLordy Trophy”!
(For 10 people)
2 pounds Thin Sliced Bacon
8 pound Ham (unsmoked)
1.) Take one small pineapple and carve in shape of a football then set aside.
2.) Carve ham into a rectangular “base” for your pineapple football. For best results make sure your base is wider at the bottom to prevent your piggy creation from tipping over. I angled the top to help hold up our eventual topper.Next wrap the base with a bacon weave. Use toothpicks (or better yet grilling skewers) to hold the bacon in place.
3.) Attach your football shaped pineapple to the top of your trophy base then wrap with bacon. Might be a good idea to count the number of skewers so you make sure you remove the same amount after you are done cooking.Be very careful when moving your meat!
4.) Speaking of cooking, time to take this trophy of piggy goodness and place in your smoker at 225 for 8 hours.
5.) I used 3/4 ORANGEWOOD & 1/4 CHERRY WOOD for a wonderful smoke flavor that really compliments the ingredients.
