
Thor’s Caviar
March 25, 2012THOR’S CAVIAR (our take on Texas Caviar) is a great dip to be served with chips it is even better with Tostitos Scoops! It also makes an absolutely great topping for your hotdogs and brats.
CAUTION: It starts sweet and ends hot… and is very addictive … if you like having your eyes water and sweat on your brow… you will like Thor’s Caviar.
(for 6 people)
1 purple onion
1/2 cup green pepper
1/2 cup red pepper
1 cup celery chopped
1 can whole kernel corn (drained)
1 can black-eyed peas (drained)
1 can pinto beans
1 can mushrooms
1 can black olives
1 small container jalapenos chopped (do not drain)
2 cups Sugar
1/2 cup canola or vegetable oil
1 1/2 cups vinegar
1 tablespoon pepper
- Chop celery, green pepper, red pepper, mushrooms and onion.
- Throw all ingredients into cooking pot bring to boil quickly, cover, and then remove from heat and allow to cool.
- Marinate in the pot 24-48 hours. (No seriously… the longer the better)
- Refrigerate. (Leftovers can be refrigerated almost forever… just like pickles)
Serve with chips, or use in place of relish.
